 This yummy vegan risotto is a wonderful sweet, summer dish which can be combined with so many different ingredients. The dish does take a little while to make as you need to cook the beetroot (in the skins), allow it to cool whilst cooking the quinoa. Once thats done you just need to blend the ingredients together and stir them into the quinoa! Simple.
To fill the dish out you could always add meat or fish (for non vegan eaters). Alternatively, add quorn or create a full yummy salad.


- Quinoa
- 4 balls of beetroot
- Juice of one lime
- Coconut oil or coconut milk
- Spinach 

Try to use homegrown ingredients where possible. Nothing tastes better!
